Spaghetti:
- 12 ounces spaghetti
Chicken:
- 2 tablespoons olive oil
- 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Mushrooms:
- 8 ounces cremini or white mushrooms, sliced
Sauce:
- 3 cloves garlic, minced
- 1/2 teaspoon dried thyme
- 1/2 cup dry white wine (or chicken broth)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Extra Parmesan and black pepper for serving
Instructions
- Cook the Spaghetti: Cook spaghetti in salted boiling water until al dente. Reserve 1/2 cup pasta water, drain, and set aside.
- Sear the Chicken: Season chicken with salt and pepper. Sear in olive oil until golden and cooked through. Remove and set aside.
- Sauté Mushrooms: In the same skillet, cook mushrooms until browned. Add garlic, thyme, and cook until fragrant.
- Deglaze and Simmer: Deglaze with white wine, simmer to reduce.
- Finish the Sauce: Stir in cream, Parmesan, and parsley. Return chicken to the pan, add spaghetti, toss to coat.
- Serve: Stir in parsley and serve with extra Parmesan and black pepper.
