Ingredients
Scale
Chicken
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and pepper to taste
Sauce
- 2 cloves garlic, minced
- 2 cups fresh spinach, chopped
- 1/2 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup Parmesan cheese, grated
Instructions
- Prepare the chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper on both sides.
- Cook the chicken: Place the chicken breasts in the skillet and cook for 6-7 minutes per side until golden brown and fully cooked through. Remove the chicken from the skillet and set it aside on a plate.
- Sauté the garlic: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant, making sure not to burn it.
- Cook the spinach: Add the chopped spinach to the skillet and cook for 1-2 minutes until it wilts down.
- Create the sauce base: Pour in the chicken broth and heavy cream, stirring well to combine. Bring the mixture to a simmer and let it cook for 3-4 minutes to thicken slightly.
- Add Parmesan cheese: Stir in the grated Parmesan cheese until melted and the sauce is well combined.
- Combine chicken and sauce: Return the cooked chicken breasts to the skillet. Spoon the creamy spinach sauce over the chicken and cook together for another 2-3 minutes to meld the flavors.
- Serve: Serve the Chicken Florentine warm alongside your choice of rice, pasta, or crusty bread to soak up the delicious sauce.
Notes
- For a lighter version, substitute heavy cream with half-and-half or coconut milk.
- You can add a squeeze of lemon juice to the sauce for a bright, fresh twist.
- Use fresh grated Parmesan for the best flavor and melting quality.
- Make sure not to overcook the chicken to keep it juicy.
- Leftovers can be stored in the refrigerator for up to 3 days.
