Instructions
- Cook the Chicken: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken pieces, seasoning them with garlic powder, onion powder, salt, and pepper. Cook the chicken until golden brown and fully cooked, approximately 5–6 minutes. Remove the chicken from the pot and set aside.
- Sauté Aromatics: In the same pot, add minced garlic and chopped onion. Sauté for 2–3 minutes until the mixture becomes fragrant and the onions turn translucent.
- Simmer Pasta and Sauce: Pour in the chicken broth and heavy cream, then stir in the uncooked pasta. Bring the mixture to a gentle boil, then reduce the heat to medium-low. Cover the pot and simmer for 10–12 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed.
- Combine and Melt Cheeses: Stir the cooked chicken back into the pot along with the Parmesan and mozzarella cheeses. Continue stirring until the cheeses melt thoroughly and the mixture becomes creamy.
- Add Spinach and Finish: If using, fold in the baby spinach and cook until wilted, about 1–2 minutes. Garnish with chopped parsley if desired, and serve hot.
