Ingredients
Scale
Marinade and Chicken
- 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon garam masala
- 1 teaspoon chili powder
- 1 teaspoon salt
Cooking
- 2 tablespoons vegetable oil
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 can (15 ounces) tomato sauce
- 1 cup heavy cream
Garnish
- 1 tablespoon fresh cilantro, chopped
Instructions
- Marinate the Chicken: In a large bowl, combine the plain yogurt, lemon juice, ground cumin, ground coriander, ground turmeric, garam masala, chili powder, and salt. Add the bite-sized chicken pieces and stir well to coat all pieces evenly. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to infuse; for best results, marinate overnight.
- Sauté the Onions: Heat vegetable oil in a large skillet over medium heat. Add the finely chopped onion and cook, stirring frequently, until the onion is soft and golden brown, about 5 to 7 minutes.
- Add Garlic and Ginger: Stir in the minced garlic and fresh ginger. Cook for 1 to 2 minutes more, until fragrant, being careful not to burn the garlic.
- Cook the Chicken: Add the marinated chicken pieces to the skillet. Cook, stirring occasionally, until the chicken is browned on all sides, approximately 5 to 7 minutes. This gives the dish a nice sear and builds flavor.
- Add Tomato Sauce and Simmer: Pour in the 15-ounce can of tomato sauce and stir to combine. Bring the mixture to a simmer, then reduce the heat to low. Let it cook uncovered for 15 minutes, stirring occasionally to prevent sticking and ensure even cooking.
- Finish with Cream: Stir in the heavy cream and continue to simmer gently for another 5 minutes, allowing the sauce to thicken slightly and heat through. Taste and adjust seasoning if necessary.
- Serve and Garnish: Serve the chicken tikka masala hot, garnished with fresh chopped cilantro. It pairs beautifully with steamed basmati rice or warm naan bread for a complete meal.
Notes
- For a spicier version, increase the chili powder or add a pinch of cayenne pepper to the marinade.
- Using chicken thighs instead of breast meat helps keep the dish juicy and tender.
- Marinating overnight enhances the depth of flavor but a minimum of one hour also works.
- Substitute heavy cream with coconut milk for a dairy-free alternative.
- Serve with basmati rice or naan for a traditional experience.
