Ingredients

Scale

Main Ingredients:

  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1 cup dried brown or green lentils, rinsed
  • 2 cups vegetable broth
  • 1/2 cup canned coconut milk or heavy cream

Additional Ingredients:

  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup grated Parmesan cheese (or nutritional yeast for vegan)
  • 1 tablespoon tomato paste
  • 2 tablespoons chopped fresh basil (plus more for garnish)
  • Salt to taste

Instructions

  1. Sauté Aromatics: In a large skillet or saucepan, heat olive oil over medium heat. Add chopped onion and sauté until softened. Stir in garlic, Italian seasoning, red pepper flakes, paprika, and black pepper.
  2. Cook Lentils: Add lentils, vegetable broth, sun-dried tomatoes, and tomato paste. Simmer covered for 25–30 minutes until tender.
  3. Add Creamy Elements: Stir in coconut milk or cream, Parmesan cheese or nutritional yeast, and fresh basil. Simmer uncovered until thick and creamy.
  4. Adjust and Serve: Taste and adjust salt. Serve warm, garnished with basil or cheese.

Notes

  • Serve over rice, mashed potatoes, or with crusty bread.
  • You can swap in red lentils for a softer texture, adjusting cooking time.
