For the Chicken:
- 4 boneless skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 1/2 cups panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup olive oil (for frying)
For Toppings:
- 8 slices fresh mozzarella cheese
- 2 large tomatoes, sliced
- 1/4 cup balsamic glaze
- 1/4 cup fresh basil leaves
Instructions
- Pound chicken breasts: To even thickness. Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
- Dredge chicken: Each chicken breast first in flour, then dip in eggs, then coat in breadcrumb mixture, pressing to adhere.
- Fry chicken: Heat olive oil in a large skillet over medium-high heat. Fry chicken breasts for 4 to 5 minutes per side until golden brown and cooked through.
- Broil: Preheat the oven broiler. Place fried chicken on a baking sheet, top each piece with mozzarella and tomato slices. Broil for 2 to 3 minutes, until cheese melts.
- Finish: Drizzle with balsamic glaze and garnish with fresh basil. Serve hot.
Notes
- For a lighter version, bake the breaded chicken at 400°F (200°C) for 20–25 minutes instead of frying.
- You can substitute balsamic vinegar reduction for balsamic glaze if desired.
