Instructions

  1. Pound chicken breasts: To even thickness. Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
  2. Dredge chicken: Each chicken breast first in flour, then dip in eggs, then coat in breadcrumb mixture, pressing to adhere.
  3. Fry chicken: Heat olive oil in a large skillet over medium-high heat. Fry chicken breasts for 4 to 5 minutes per side until golden brown and cooked through.
  4. Broil: Preheat the oven broiler. Place fried chicken on a baking sheet, top each piece with mozzarella and tomato slices. Broil for 2 to 3 minutes, until cheese melts.
  5. Finish: Drizzle with balsamic glaze and garnish with fresh basil. Serve hot.

Notes
