Description

These Crispy Hungarian Potato Cheese Sticks are a deliciously golden and crunchy snack made from mashed potatoes blended with cheddar cheese and paprika. Perfectly fried to achieve a crispy exterior and soft, cheesy interior, they make a delightful appetizer or side dish with a hint of Hungarian flair.

Ingredients

Scale

Potato Mixture

  • 2 cups potatoes, peeled and cubed
  • 2 tbsp butter
  • ½ cup shredded cheddar cheese (or a mix of cheeses)
  • 1 egg yolk
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp paprika (Hungarian sweet paprika preferred)
  • ½ cup all-purpose flour (plus extra for dusting)

Coating

  • 1 egg, beaten (for egg wash)
  • 1 cup breadcrumbs

For Frying

  • Oil, for frying (enough to fill skillet about 1 inch deep)

Instructions

  1. Boil and Mash Potatoes: Boil the peeled and cubed potatoes in salted water for about 10 to 12 minutes until they are tender when pierced with a fork. Drain the potatoes thoroughly, then mash them with butter until the mixture is smooth and creamy.
  2. Mix in Cheese and Seasonings: Stir in the shredded cheese, egg yolk, salt, black pepper, and paprika into the mashed potatoes. Continue mixing until the cheese is fully melted and incorporated into the mixture, creating a flavorful and cohesive dough.
  3. Incorporate Flour and Shape: Allow the mixture to cool slightly so it’s easier to handle. Then, gradually fold in the all-purpose flour until combined. Dust your hands with flour and roll the mixture into stick shapes about 3 inches long, ensuring they hold together well.
  4. Coat with Egg and Breadcrumbs: Dip each potato cheese stick first into the beaten egg wash, ensuring it is fully coated. Then roll the sticks in breadcrumbs completely, which will give them a crispy texture when fried.
  5. Fry Until Golden and Crispy: Heat oil in a skillet to 350°F (175°C). Fry the sticks in batches, making sure not to overcrowd the pan, for 2 to 3 minutes or until they turn golden brown and crisp on all sides. Remove the cooked sticks and drain on paper towels to remove excess oil.
  6. Serve: Serve the crispy Hungarian potato cheese sticks hot. They are delicious on their own or paired with sour cream or a tangy dipping sauce for extra flavor.

Notes

  • Use Hungarian sweet paprika for authentic flavor, but regular paprika works as a substitute.
  • Make sure the mashed potato mixture is cooled before adding flour to prevent it from becoming too sticky.
  • Maintain oil temperature at 350°F to ensure even frying and prevent greasy sticks.
  • For a gluten-free version, substitute all-purpose flour and breadcrumbs with gluten-free alternatives.
  • These sticks are best enjoyed fresh but can be reheated in an oven to restore crispiness.
