Ingredients
Scale
Potato Mixture
- 2 cups potatoes, peeled and cubed
- 2 tbsp butter
- ½ cup shredded cheddar cheese (or a mix of cheeses)
- 1 egg yolk
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp paprika (Hungarian sweet paprika preferred)
- ½ cup all-purpose flour (plus extra for dusting)
Coating
- 1 egg, beaten (for egg wash)
- 1 cup breadcrumbs
For Frying
- Oil, for frying (enough to fill skillet about 1 inch deep)
Instructions
- Boil and Mash Potatoes: Boil the peeled and cubed potatoes in salted water for about 10 to 12 minutes until they are tender when pierced with a fork. Drain the potatoes thoroughly, then mash them with butter until the mixture is smooth and creamy.
- Mix in Cheese and Seasonings: Stir in the shredded cheese, egg yolk, salt, black pepper, and paprika into the mashed potatoes. Continue mixing until the cheese is fully melted and incorporated into the mixture, creating a flavorful and cohesive dough.
- Incorporate Flour and Shape: Allow the mixture to cool slightly so it’s easier to handle. Then, gradually fold in the all-purpose flour until combined. Dust your hands with flour and roll the mixture into stick shapes about 3 inches long, ensuring they hold together well.
- Coat with Egg and Breadcrumbs: Dip each potato cheese stick first into the beaten egg wash, ensuring it is fully coated. Then roll the sticks in breadcrumbs completely, which will give them a crispy texture when fried.
- Fry Until Golden and Crispy: Heat oil in a skillet to 350°F (175°C). Fry the sticks in batches, making sure not to overcrowd the pan, for 2 to 3 minutes or until they turn golden brown and crisp on all sides. Remove the cooked sticks and drain on paper towels to remove excess oil.
- Serve: Serve the crispy Hungarian potato cheese sticks hot. They are delicious on their own or paired with sour cream or a tangy dipping sauce for extra flavor.
Notes
- Use Hungarian sweet paprika for authentic flavor, but regular paprika works as a substitute.
- Make sure the mashed potato mixture is cooled before adding flour to prevent it from becoming too sticky.
- Maintain oil temperature at 350°F to ensure even frying and prevent greasy sticks.
- For a gluten-free version, substitute all-purpose flour and breadcrumbs with gluten-free alternatives.
- These sticks are best enjoyed fresh but can be reheated in an oven to restore crispiness.
