Potatoes:
- 2 pounds baby potatoes, halved
Seasoning:
- 3 tablespoons olive oil
- 1/3 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Garnish:
- 1 tablespoon chopped fresh parsley (optional)
- Extra Parmesan for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 425°F and line a large baking sheet with parchment paper or foil.
- Toss potatoes: In a large bowl, toss the halved baby potatoes with olive oil, Parmesan cheese, minced garlic, garlic powder, onion powder, salt, and pepper until evenly coated.
- Bake: Spread the potatoes cut side down in a single layer on the prepared baking sheet. Bake for 25–30 minutes until golden brown and crispy on the bottom.
- Finish: Remove from the oven, cool slightly, loosen the crispy bottoms with a spatula, transfer to a serving dish, and garnish with parsley and extra Parmesan if desired. Serve warm.
Notes
- For ultra-crispy results, avoid overcrowding the pan and don’t move the potatoes while baking.
- You can use Yukon Gold or red potatoes if baby potatoes aren’t available.
