Instructions

- Drain the Zucchini: Transfer the zucchini to a clean kitchen towel and squeeze firmly to remove as much liquid as possible.
- Combine Ingredients: Return the zucchini to a dry bowl and mix in the flour, Parmesan cheese, egg, garlic, black pepper, and parsley until well combined.
- Fry the Fritters: Heat olive oil in a large skillet over medium heat. Scoop about 2 tablespoons of the mixture for each fritter, flatten slightly, and place in the skillet. Cook for 3-4 minutes per side until golden brown and crispy.
- Serve: Drain on paper towels and serve warm.
