- 2 pounds boneless, skinless chicken thighs or breasts
Vegetables:
- 1/2 cup kalamata olives (pitted and halved)
- 1/2 cup sun-dried tomatoes (chopped)
- 1/2 cup cherry tomatoes (halved)
- 1 small red onion (thinly sliced)
- 3 cloves garlic (minced)
Seasonings and Liquids:
- 1/2 cup chicken broth
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Optional Garnish:
- Crumbled feta cheese
- Chopped fresh parsley
Instructions
- Prepare Ingredients: Place chicken in the slow cooker and top with olives, sun-dried tomatoes, cherry tomatoes, red onion, and garlic.
- Mix Seasonings: In a bowl, combine chicken broth, olive oil, lemon juice, oregano, basil, salt, and pepper. Pour over the chicken and vegetables.
- Cook: Cover and cook on low for 6–7 hours or on high for 3–4 hours until chicken is tender.
- Serve: Garnish with feta and parsley. Enjoy with rice, couscous, or pita bread.
Notes
- For extra richness, stir in a tablespoon of sun-dried tomato oil from the jar.
