Description

This Crock Pot White Lasagna Soup is a creamy, comforting Italian-American dish featuring tender lasagna noodles, seasoned Italian sausage, white beans, fresh spinach, and a blend of ricotta, mozzarella, and Parmesan cheeses. Slow-cooked to perfection, this hearty soup combines all the flavors of classic lasagna in a warm, easy-to-make crock pot meal.

Ingredients

Scale

Sauce and Soup Base

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 pound ground Italian sausage (mild or spicy)
  • 4 cups low-sodium chicken broth
  • 2 cups water
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Main Ingredients

  • 8 lasagna noodles, broken into pieces
  • 1 (15 oz) can white beans, drained and rinsed
  • 1 (10 oz) bag fresh spinach

Cheeses

  • 1 cup ricotta cheese
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Sauté Aromatics and Sausage: In a skillet over medium heat, heat olive oil and sauté the diced onion for 3–4 minutes until softened and translucent. Add minced garlic and cook for an additional 30 seconds. Then, add ground Italian sausage and cook until browned, breaking it up into small pieces as it cooks.
  2. Combine in Crock Pot: Transfer the cooked sausage mixture to the Crock Pot. Add chicken broth, water, Italian seasoning, salt, black pepper, broken lasagna noodles, and white beans. Stir well to combine all ingredients evenly.
  3. Slow Cook Soup Base: Cover the Crock Pot and cook on low for 6–7 hours or on high for 3–4 hours, until the lasagna noodles are tender and flavors have melded.
  4. Add Greens and Cheeses: About 20 minutes before serving, stir in fresh spinach, ricotta cheese, heavy cream, shredded mozzarella, and grated Parmesan. Cover again and cook until the spinach wilts and cheeses melt completely.
  5. Final Stir and Serve: Stir the soup thoroughly to evenly distribute the melted cheeses and wilted spinach. Serve the soup hot for a comforting meal.

Notes

  • For a lighter version, substitute turkey sausage and use milk instead of heavy cream.
  • You can replace spinach with kale for a different leafy green variation.
  • Add crushed red pepper flakes for a spicy kick.
  • Use gluten-free lasagna noodles to make the soup gluten-free.
