Description

This Crockpot Beef Tips & Noodles recipe is a comforting, hearty dish perfect for slow cooker meals. Tender beef tips are seared to lock in flavor, then slow cooked in a savory gravy with onions, garlic, and a blend of Worcestershire and soy sauces. Served over egg noodles and optionally garnished with parsley, this meal offers a warm and satisfying dinner that’s easy to prepare and perfect for family gatherings or cozy weeknights.

Ingredients

Scale

Beef and Sauce

  • 2 pounds beef stew meat or sirloin tips, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper

Thickener

  • 1 tablespoon cornstarch
  • 2 tablespoons water

Noodles and Garnish

  • 12 oz egg noodles, cooked and drained
  • Optional: chopped parsley for garnish

Instructions

  1. Brown the beef: In a large skillet over medium-high heat, heat the olive oil and sear the beef tips until browned on all sides, about 4–5 minutes. This step locks in flavor and seals in juices. Then transfer the browned beef to the crockpot.
  2. Add aromatics and liquids: Add the chopped onion, minced garlic, beef broth, Worcestershire sauce, soy sauce, dried thyme, and black pepper into the crockpot with the beef. Stir gently to combine all ingredients evenly.
  3. Slow cook the beef: Cover the crockpot and cook on low for 6–8 hours, or on high for 3–4 hours, until the beef is tender and flavorful.
  4. Prepare the slurry: In a small bowl, whisk together the cornstarch and water until fully combined to create a slurry. This will help thicken the sauce.
  5. Thicken the sauce: About 30 minutes before the cooking time is complete, stir the cornstarch slurry into the crockpot. Continue cooking with the lid on to allow the sauce to thicken nicely.
  6. Cook the noodles: Just before serving, cook the egg noodles according to package directions. Drain thoroughly.
  7. Serve: Serve the tender beef tips and thickened gravy over the cooked egg noodles. Garnish with chopped parsley if desired for a fresh burst of color and flavor.

Notes

  • You can substitute mashed potatoes or rice if you prefer instead of egg noodles.
  • For extra richness, stir in a splash of heavy cream or a spoonful of sour cream into the sauce at the end of cooking.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
  • Ensure beef pieces are cut evenly for consistent cooking.
