For the Stuffing:
- 1 lb ground Italian sausage (mild or hot)
- 1/4 cup unsalted butter
- 1 large yellow onion, diced
- 3 celery stalks, chopped
- 2 apples, peeled and diced (Honeycrisp or Granny Smith)
- 2 garlic cloves, minced
- 1 tablespoon fresh sage, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
- 12 cups dried cubed bread (about 1 loaf)
- 2 ½ cups chicken broth
- 2 large eggs, beaten
- Salt and black pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- Cook the Sausage: In a large skillet, brown the sausage over medium heat. Set aside.
- Sauté the Vegetables: In the same skillet, sauté onion and celery until softened. Add apples and cook for a few minutes. Stir in garlic, sage, and thyme.
- Combine Ingredients: In a bowl, mix bread cubes, cooked sausage, and sautéed vegetables. In another bowl, whisk together chicken broth and eggs. Pour over the stuffing and mix well.
- Cook in Crockpot: Transfer the mixture to a greased crockpot. Cook on low for 4–5 hours or high for 2–3 hours until set. Stir before serving.
Notes
- Use day-old bread or toast fresh cubes to dry them out.
- For a vegetarian version, omit sausage and use vegetable broth.
- This stuffing can be prepped ahead and refrigerated before cooking.
