For the Stuffing:

  • 1 lb ground Italian sausage (mild or hot)
  • 1/4 cup unsalted butter
  • 1 large yellow onion, diced
  • 3 celery stalks, chopped
  • 2 apples, peeled and diced (Honeycrisp or Granny Smith)
  • 2 garlic cloves, minced
  • 1 tablespoon fresh sage, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • 12 cups dried cubed bread (about 1 loaf)
  • 2 ½ cups chicken broth
  • 2 large eggs, beaten
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Cook the Sausage: In a large skillet, brown the sausage over medium heat. Set aside.
  2. Sauté the Vegetables: In the same skillet, sauté onion and celery until softened. Add apples and cook for a few minutes. Stir in garlic, sage, and thyme.
  3. Combine Ingredients: In a bowl, mix bread cubes, cooked sausage, and sautéed vegetables. In another bowl, whisk together chicken broth and eggs. Pour over the stuffing and mix well.
  4. Cook in Crockpot: Transfer the mixture to a greased crockpot. Cook on low for 4–5 hours or high for 2–3 hours until set. Stir before serving.

Notes

  • Use day-old bread or toast fresh cubes to dry them out.
  • For a vegetarian version, omit sausage and use vegetable broth.
