  • 2 tablespoons Dijon mustard
  • 2 tablespoons salted butter
  • 2 tablespoons honey

For the Sandwiches:

  • 4 large croissants

  • ½ pound deli-sliced ham
  • 8 slices cooked bacon

For the Eggs:

  • 5 large eggs
  • Splash of milk
  • Salt and pepper (to taste)
  • 1 tablespoon butter

Instructions

  1. Make the Dijon Honey Spread: In a small bowl, whisk together the Dijon mustard, salted butter, and honey until smooth. Set aside.
  2. Prepare the Eggs: In a bowl, whisk together the 5 eggs, a splash of milk, salt, and pepper.
  3. Cook the Scrambled Eggs: Heat 1 tablespoon of butter in a non-stick skillet over medium heat. Once the butter is melted, pour in the egg mixture. Scramble the eggs gently with a spatula, cooking until they are just set. Remove from the heat and set aside.
  4. Assemble the Sandwiches: Slice the croissants in half horizontally, but not all the way through.
  5. Spread the Dijon Honey Spread: Spread a generous amount of the Dijon honey spread on the inside of each croissant.
  6. Add Cheese: Place 2 slices of cheese on the bottom half of each croissant.
  7. Layer Ham and Bacon: Add a few slices of deli-sliced ham and 2 slices of cooked bacon on top of the cheese.
  8. Add Eggs: Spoon a portion of scrambled eggs on top of the ham and bacon.
  9. Close the Sandwiches: Close the croissants to form the sandwich.
