For the Spread:
- 2 tablespoons Dijon mustard
- 2 tablespoons salted butter
- 2 tablespoons honey
For the Sandwiches:
- 4 large croissants
- 8 slices of cheese (Gouda, baby Swiss, cheddar, or your favorite)
- ½ pound deli-sliced ham
- 8 slices cooked bacon
For the Eggs:
- 5 large eggs
- Splash of milk
- Salt and pepper (to taste)
- 1 tablespoon butter
- Fresh chives (optional, for garnish)
Instructions
- Make the Dijon Honey Spread: In a small bowl, whisk together the Dijon mustard, salted butter, and honey until smooth. Set aside.
- Prepare the Eggs: In a bowl, whisk together the 5 eggs, a splash of milk, salt, and pepper.
- Cook the Scrambled Eggs: Heat 1 tablespoon of butter in a non-stick skillet over medium heat. Once the butter is melted, pour in the egg mixture. Scramble the eggs gently with a spatula, cooking until they are just set. Remove from the heat and set aside.
- Assemble the Sandwiches: Slice the croissants in half horizontally, but not all the way through.
- Spread the Dijon Honey Spread: Spread a generous amount of the Dijon honey spread on the inside of each croissant.
- Add Cheese: Place 2 slices of cheese on the bottom half of each croissant.
- Layer Ham and Bacon: Add a few slices of deli-sliced ham and 2 slices of cooked bacon on top of the cheese.
- Add Eggs: Spoon a portion of scrambled eggs on top of the ham and bacon.
- Close the Sandwiches: Close the croissants to form the sandwich.
- Toast the Sandwiches (Optional): For a crispy finish, melt 1 tablespoon of butter in a skillet over medium heat. Place the assembled croissant sandwiches in the skillet and cook for 2-3 minutes on each side, or until the croissant is golden and the cheese is melted.
