Description

This Crunchy Kataifi Dubai Chocolate Bar Filling is an incredible dessert recipe combining the crispiness of baked kataifi pastry with a rich, nutty, and chocolatey filling. Infused with roasted hazelnuts, pistachios, tahini, and a blend of milk and dark chocolate, this unique Middle Eastern fusion treat offers a perfect balance of textures and flavors. It’s ideal for filling chocolate bar molds, creating a luxurious homemade sweet snack.

Ingredients

Scale

Kataifi Pastry Mix

  • 1 cup kataifi pastry (shredded phyllo dough)
  • 2 tablespoons unsalted butter (melted)

Nut and Cereal Mix

  • 1/4 cup roasted hazelnuts (chopped)
  • 1/4 cup roasted pistachios (chopped)
  • 1/4 cup crispy rice cereal

Binding Ingredients

  • 2 tablespoons tahini
  • 1/4 cup sweetened condensed milk
  • 1/2 teaspoon rose water (optional)
  • 1/4 teaspoon sea salt

Chocolate Coating

  • 1/3 cup milk chocolate chips (melted)
  • 1/3 cup dark chocolate chips (melted)

Instructions

  1. Preheat and prepare kataifi: Preheat your oven to 350°F (175°C). Toss the kataifi pastry with the melted butter thoroughly to ensure all strands are well coated.
  2. Bake the kataifi: Spread the coated kataifi evenly on a baking sheet. Bake for 10 to 12 minutes until it turns golden brown and crispy, stirring once halfway through baking for even crispness. Let it cool completely to room temperature.
  3. Mix the filling ingredients: In a large mixing bowl, combine the cooled kataifi, chopped roasted hazelnuts, pistachios, crispy rice cereal, tahini, sweetened condensed milk, rose water if using, and sea salt. Mix all ingredients thoroughly until fully incorporated.
  4. Add melted chocolate: Gently fold in the melted milk and dark chocolate chips, stirring slowly so the mixture becomes a thick, cohesive, crunchy filling.
  5. Mold and chill: Press the mixture firmly into silicone chocolate bar molds or a parchment-lined pan, spreading evenly. Refrigerate for about 1 hour or until the filling is firm and set.

Notes

  • Rose water provides a subtle floral aroma but can be omitted if you prefer a more traditional chocolate-nut flavor.
  • You can substitute tahini with almond butter or Nutella to experiment with different taste profiles.
