For the Taco Meat:
- 1 lb ground beef
- 1 packet taco seasoning
- ¾ cup water
For the Salad:
- 6 cups chopped romaine or iceberg lettuce
- 1 ½ cups cherry tomatoes (halved)
- 1 cup canned black beans (rinsed and drained)
- 1 cup shredded cheddar cheese
- 1 avocado (diced)
- ½ cup sliced black olives (optional)
- 2 cups nacho cheese Doritos (crushed slightly)
- ½ cup Catalina or ranch dressing
Instructions
- Cook the Taco Meat: In a skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it up as it cooks. Drain excess grease. Add taco seasoning and water, stir well, and simmer for 4–5 minutes until thickened. Remove from heat and let cool slightly.
- Prepare the Salad: In a large salad bowl, combine chopped lettuce, cherry tomatoes, black beans, cheese, avocado, and olives if using. Add the cooled taco meat and gently toss.
- Assemble the Salad: Just before serving, add the crushed Doritos and drizzle with dressing. Toss everything together to coat evenly. Serve immediately.

- For a lighter option, use ground turkey or chicken.
- You can also swap Catalina dressing for salsa and sour cream or use Greek yogurt for a healthier twist.
