Meat and Seasoning
- 1 pound lean ground beef
- 1 packet (1 ounce) taco seasoning
Salad Base
- 3 to 4 Romaine lettuce hearts, rinsed and chopped
- 1 cup black beans, rinsed
- 1 large tomato, chopped OR sliced cherry tomatoes
- 1/2 cup shredded cheddar cheese
Toppings and Dressing
- 1 ½ cups nacho cheese Doritos, broken into bite-size pieces
- 1 cup Catalina dressing OR your favorite salad dressing (ranch dressing works well too)
- Fresh cilantro (optional)
Instructions
- Cook the Ground Beef: Brown and crumble the ground beef in a large skillet over medium-high heat. Drain any excess grease. Add the taco seasoning and the amount of water called for on the seasoning packet. Stir the mixture and bring it to a boil. Then reduce the heat to low and let it simmer for 10 minutes. Remove the skillet from heat and allow the meat to cool slightly.
- Prepare the Salad: In a large salad bowl, combine the chopped Romaine lettuce, rinsed black beans, chopped or sliced tomatoes, and shredded cheddar cheese. Add the slightly cooled seasoned ground beef to the bowl. Gently toss everything together to mix the ingredients evenly. You can serve the salad immediately or chill it in the refrigerator until ready to eat.
- Add Chips and Dressing Before Serving: Just before serving, add the broken nacho cheese Doritos chips and your chosen salad dressing to the bowl. Toss the salad gently to coat all ingredients well. Garnish with fresh cilantro if using, then serve immediately for the best texture and flavor.
Notes
- Do not add Doritos chips until just before serving to keep them crunchy.
- Ground beef can be substituted with ground turkey or plant-based meat for a different protein option.
- Feel free to use ranch or any other salad dressing if Catalina is not preferred.
- Adding fresh cilantro is optional but adds a nice fresh flavor.
- Black beans should be rinsed well to reduce sodium and improve taste.
