Description

Delight your family this Easter with these charming Easter Bunny Pancakes. Soft, fluffy, and decorated with mini chocolate chips or fruit slices to create adorable bunny faces, this recipe is perfect for a festive breakfast or brunch that kids and adults will love.

Ingredients

Scale

Pancake Batter

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 2 tbsp granulated sugar
  • 1/2 tsp salt
  • 1 cup whole milk
  • 2 large eggs
  • 2 tbsp melted butter
  • 1 tsp vanilla extract

Decoration

  • Mini chocolate chips or fruit slices (for decoration)

Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and salt to evenly distribute the leavening and seasoning.
  2. Mix Wet Ingredients: In a separate bowl, combine the whole milk, large eggs, melted butter, and vanilla extract, mixing until you get a smooth liquid mixture free of lumps.
  3. Combine Batter: Gradually pour the wet ingredients into the dry ingredients, stirring gently just until combined. Avoid overmixing to keep the pancakes light and fluffy.
  4. Preheat Griddle: Heat a griddle or large non-stick skillet over medium heat and lightly grease it with butter or oil to prevent sticking.
  5. Shape Pancakes: Pour the batter onto the griddle in a larger circle for the bunny’s head and two smaller adjacent circles above it for the ears, forming the bunny shape.
  6. Cook and Decorate: Cook the pancakes for about 2-3 minutes until the bottoms are golden brown and bubbles start forming on top. Then place mini chocolate chips or fruit slices to create the bunny’s eyes, nose, and other features before carefully flipping the pancakes to cook the other side for another 2 minutes or until cooked through.

Notes

  • Use fresh ingredients for best flavor and rise.
  • Do not overmix batter to avoid dense pancakes.
  • Adjust heat if pancakes brown too fast or cook too slowly.
  • Substitute whole milk with plant-based milk for a dairy-free option.
  • Use maple syrup or honey for serving if desired.
