Description

Celebrate Easter with these colorful and fun Easter Egg Rice Krispie Treats. Made with gooey melted marshmallows, buttery Rice Krispies cereal, and decorated with pastel food coloring and optional sprinkles or mini candies, these no-bake treats are perfect for kids and festive occasions. They are easy to shape into adorable egg shapes using your hands or plastic molds, making them a delightful and creative dessert for Easter gatherings.

Ingredients

Scale

Base Ingredients

  • 3 tablespoons unsalted butter
  • 1 package (10 oz) mini marshmallows
  • 6 cups Rice Krispies cereal
  • 1/2 teaspoon vanilla extract

Coloring and Decoration

  • Assorted pastel food coloring
  • Nonstick cooking spray or butter (for hands and molds)
  • Sprinkles or mini chocolate candies (optional for decorating)

Instructions

  1. Melt Butter and Marshmallows: In a large saucepan over medium heat, melt the butter completely. Add the mini marshmallows and stir constantly until the mixture is fully melted and smooth.
  2. Add Vanilla Extract: Remove the saucepan from the heat and stir in the vanilla extract to infuse flavor into the melted marshmallow mixture.
  3. Color the Mixture: Quickly divide the melted marshmallow mixture into separate bowls, according to how many different pastel colors you want your eggs to be. Add a few drops of different pastel food coloring to each bowl and stir well to combine.
  4. Mix in Cereal: Working with one colored mixture at a time, mix in 2 cups of Rice Krispies cereal into each bowl. Stir until the cereal is fully coated with the colored marshmallow.
  5. Shape the Treats: Lightly grease your hands or plastic Easter egg molds with nonstick cooking spray or butter. Shape the colored cereal mixture into egg shapes by hand or press the mixture firmly into the molds to form egg shapes.
  6. Decorate and Set: Place the shaped eggs on wax or parchment paper to cool and set. While the treats are still slightly warm, press in sprinkles or mini chocolate candies if desired for decoration. Allow to cool completely before serving.

Notes

  • For a fun surprise, hide a small chocolate candy in the center of each egg before shaping.
  • Store the finished treats in an airtight container at room temperature for up to 3 days to maintain freshness.
  • Lightly greasing hands or molds will prevent sticking and make shaping easier.
  • You can customize the food coloring to match any holiday or party theme.
