Ingredients
Scale
Chicken & Vegetables
- 2 cups cooked shredded chicken (rotisserie works great)
- 1 (12-ounce) bag frozen mixed vegetables (peas, carrots, corn)
- 1/2 cup chopped green onions
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt (optional)
- 1 cup shredded cheddar cheese (optional)
For the Cobbler Batter
- 1 cup Bisquick or self-rising flour
- 1 cup milk
For the Creamy Topping
- 1/2 cup chicken broth
- 1 (10.5-ounce) can cream of chicken soup
- 4 tablespoons unsalted butter (melted)
Instructions
- Preheat and prepare baking dish: Preheat oven to 375°F (190°C). Pour melted butter into the bottom of a 9×13-inch baking dish and tilt to evenly coat the base.
- Layer chicken and vegetables: Spread shredded chicken evenly over the butter. Add the frozen mixed vegetables and chopped green onions on top. Sprinkle garlic powder, dried thyme, black pepper, and salt evenly over the vegetables. If using, sprinkle shredded cheddar cheese on top.
- Make and add batter: In a small bowl, whisk together Bisquick (or self-rising flour) and milk until smooth. Pour this batter evenly over the layered casserole without stirring.
- Prepare creamy topping and add: In another bowl, combine chicken broth and cream of chicken soup until well mixed. Gently pour this mixture over the batter layer without stirring.
- Bake the casserole: Place uncovered in the oven and bake for 40–45 minutes, or until the top turns golden brown and the casserole filling is bubbly.
- Rest and serve: Remove from the oven and let the casserole rest for 5–10 minutes before serving to allow layers to set.
Notes
- Do not stir after layering; this preserves the pumpkin biscuit-like texture on top and creamy base beneath.
- Use fresh, leftover, or rotisserie chicken for convenience and flavor.
- Feel free to substitute or add different vegetables like broccoli, green beans, or mushrooms according to preference.
- Cheddar cheese adds richness but is optional based on dietary needs or taste.
- Resting time helps the layers set and makes slicing easier.
