For the Taco Mac:

  • 1 tablespoon olive oil
  • 1 pound ground beef or ground turkey
  • 1 small yellow onion, diced
  • 2 garlic cloves, minced
  • 2 tablespoons taco seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (10-ounce) can diced tomatoes with green chiles, drained
  • 8 ounces elbow macaroni or small pasta shells
  • 2 cups beef or chicken broth

For the Creamy Sauce:

  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • chopped cilantro for garnish (optional)

Instructions

  1. Brown the Meat: In a large skillet or deep sauté pan, heat olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spatula, about 5–6 minutes. Drain excess grease if needed.
  2. Sauté Aromatics: Add the diced onion and garlic and sauté for 2–3 minutes until softened. Stir in taco seasoning, salt, and pepper.
  3. Cook Pasta: Add the drained diced tomatoes, pasta, and broth. Stir well to combine and bring to a simmer. Reduce heat to medium-low, cover, and cook for 10–12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
  4. Finish with Creamy Sauce: Remove from heat and stir in sour cream and both cheeses until melted and creamy. Garnish with chopped cilantro if desired and serve hot.

Notes

  • For added veggies, stir in a cup of corn or chopped bell pepper during the simmering stage.
