For the Taco Mac:
- 1 tablespoon olive oil
- 1 pound ground beef or ground turkey
- 1 small yellow onion, diced
- 2 garlic cloves, minced
- 2 tablespoons taco seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (10-ounce) can diced tomatoes with green chiles, drained
- 8 ounces elbow macaroni or small pasta shells
- 2 cups beef or chicken broth
For the Creamy Sauce:
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- chopped cilantro for garnish (optional)
Instructions
- Brown the Meat: In a large skillet or deep sauté pan, heat olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spatula, about 5–6 minutes. Drain excess grease if needed.
- Sauté Aromatics: Add the diced onion and garlic and sauté for 2–3 minutes until softened. Stir in taco seasoning, salt, and pepper.
- Cook Pasta: Add the drained diced tomatoes, pasta, and broth. Stir well to combine and bring to a simmer. Reduce heat to medium-low, cover, and cook for 10–12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
- Finish with Creamy Sauce: Remove from heat and stir in sour cream and both cheeses until melted and creamy. Garnish with chopped cilantro if desired and serve hot.
Notes
- For added veggies, stir in a cup of corn or chopped bell pepper during the simmering stage.
- You can also make this dish spicier by adding a dash of hot sauce or using spicy taco seasoning.
