Marinated Chicken:

  • 1 ½ pounds boneless, skinless chicken thighs (cut into bite-sized pieces)
  • 1 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon salt

Butter Chicken Sauce:

  • 2 tablespoons butter
  • 1 tablespoon oil
  • 1 medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon tomato paste
  • 1 ½ cups tomato puree (or canned crushed tomatoes)
  • 1 cup heavy cream
  • 1 teaspoon sugar
  • fresh cilantro for garnish (optional)

Instructions

  1. Marinate the Chicken: Combine chicken, yogurt, lemon juice, garam masala, cumin, turmeric, coriander, and salt. Marinate for at least 30 minutes.
  2. Cook the Sauce: Sauté onion, garlic, and ginger. Add tomato paste and puree, simmer for 10 minutes. Add marinated chicken and cook for 15–20 minutes.
  3. Finish the Dish: Stir in cream and sugar, simmer for 5 minutes. Garnish with cilantro and serve hot with rice or naan.

  • For a lighter version, use half-and-half or coconut milk instead of heavy cream.
