Description
These Easy Italian Mini Meatloaves are a fun twist on classic meatloaf, baked in a muffin tin for individual servings. Packed with Italian flavors and topped with gooey melted mozzarella, these mini meatloaves are sure to be a hit with the whole family.

For the Meatloaves:
- 1 lb ground beef or Italian sausage (or a mix)
- ½ cup Italian-style breadcrumbs
- 1 large egg
- ¼ cup milk
- ½ cup grated Parmesan cheese
- 2 teaspoons Italian seasoning
- 2 garlic cloves (minced)
- ¼ cup finely chopped onion
- ¼ teaspoon salt
- ¼ teaspoon black pepper
For Topping:
- ½ cup marinara sauce (plus more for serving)
- ½ cup shredded mozzarella cheese
- Chopped parsley (for garnish, optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.
- In a large bowl, combine ground meat, breadcrumbs, egg, milk, Parmesan, Italian seasoning, garlic, onion, salt, and pepper. Mix just until combined—do not overmix.
- Divide the mixture evenly among the muffin cups, pressing gently to shape. Spoon about a teaspoon of marinara sauce over each mini meatloaf.
- Bake for 20–22 minutes, then remove from the oven and sprinkle mozzarella cheese over the tops. Return to oven and bake an additional 3–5 minutes, until cheese is melted and meatloaves are cooked through (internal temp should reach 160°F).
- Let rest for 5 minutes before removing from the tin. Garnish with chopped parsley and serve with extra marinara on the side.
Notes
- These freeze well and make a great meal prep option.
- You can substitute ground turkey or chicken for a leaner version.
- Add chopped spinach or grated zucchini for extra veggies.
