Instructions
- Preheat and Prepare: Preheat your oven to 400°F and line two baking sheets with parchment paper. Place one sheet of puff pastry on a baking sheet and gently roll it out slightly to form a flat square. Cut this square into 6 equal rectangles.
- Make the Filling: In a small bowl, whisk together the thick strawberry jam and cornstarch until smooth to create a thickened fruit filling.
- Fill the Pastry: Spoon about 1 ½ tablespoons of the jam mixture onto 3 of the pastry rectangles, leaving a ½-inch border around the edges free from filling.
- Apply Egg Wash Edges: In a separate small bowl, whisk the egg with 1 tablespoon of water to make an egg wash. Lightly brush the edges of the jam-covered rectangles with this egg wash to help seal the pastry.
