Fresh Corn Medley:
- 3 cups fresh corn kernels (about 4 ears)
- 1 cup cherry tomatoes (halved)
- 1 small zucchini (diced)
- 1/4 cup red onion (finely chopped)
- 2 tablespoons olive oil
- 1 tablespoon fresh lime juice
- 2 tablespoons fresh basil (chopped)
- Salt and black pepper to taste
Instructions
- Heat the olive oil: In a large skillet over medium heat, heat the olive oil.
- Sauté the onion: Add the red onion and sauté for 2 minutes until slightly softened.
- Cook the zucchini: Stir in the zucchini and cook for another 3 minutes until just tender.
- Add the corn: Add the corn and cook for 4 to 5 minutes until tender and golden.
- Include cherry tomatoes: Stir in the cherry tomatoes and cook for 1 to 2 more minutes until softened.
- Finish and serve: Remove from heat, stir in lime juice and basil. Season with salt and pepper. Serve warm or at room temperature.
