- 2/3 cup pineapple juice
- 1 1/2 tbsp brown sugar
- 1 1/2 tbsp cider vinegar
- 1/2 tsp salt
- 2 tbsp extra virgin olive oil, divided in two
- 4 boneless pork loin chops
- 1-2 onions, chopped
- Cooked noodles for serving
Mix pineapple juice, vinegar, brown sugar, and salt in a small bowl. Heat 1 tablespoon oil over medium heat in a large skillet.
Brown the pork chops by cooking them for 2 minutes each side.
Remove from pan and set aside.
Using the same pan, cook the onions in the leftover oil over until tender. Add the juice mix and bring to a light boil.
Simmer covered at low heat for 10 minutes.
Place the pork chops back to the pan and cook for 4 minutes covered.
Let stand, covered for 4 minutes to lock in flavor, and serve over rice or noodles.
