Instructions
- Egg White Scramble: In a medium bowl, whisk the egg whites with garlic powder, salt, and pepper until slightly frothy.
- Vegetable Mixture: Heat olive oil in a nonstick skillet over medium heat. Add onion and cook until softened. Add cherry tomatoes and cook until slightly softened. Stir in spinach and cook until wilted.
- Cooking: Reduce heat to low and pour in the egg whites. Allow them to set slightly, then gently stir and fold until cooked through but still soft. Remove from heat, sprinkle with feta cheese if using, and garnish with fresh herbs. Serve immediately.
