  • 2 tablespoons softened butter

Cheese

  • 1/2 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella cheese

Vegetables & Seasoning

  • 1 cup fresh baby spinach
  • 1 tablespoon olive oil
  • 1 clove garlic, minced (optional)
  • Salt and black pepper to taste


Instructions

  1. Sauté Spinach: In a skillet over medium heat, warm the olive oil and sauté the fresh baby spinach with a pinch of salt and the minced garlic if using, for 1–2 minutes until just wilted. Remove from heat and set aside.
  2. Prepare Sandwiches: Butter one side of each slice of bread. On the unbuttered side of two slices, layer the sautéed spinach, crumbled feta, and shredded mozzarella. Season with black pepper if desired, then top with the remaining bread slices, ensuring the buttered side is facing out.
  3. Grill Sandwiches: Heat a skillet or griddle over medium-low heat. Place the sandwiches in the pan and cook for 3–4 minutes per side, or until the bread is golden brown and the cheese is melted. Press gently with a spatula to help the cheeses melt evenly.
  4. Serve: Remove the sandwiches from the skillet, let them cool for 1–2 minutes to set, then slice and serve warm.
