Dry Ingredients:
- 3 cups quick oats
- 2 cups sweetened shredded coconut
Wet Ingredients:
- 1/2 cup butter
- 2 cups granulated sugar
- 1/2 cup milk
- 6 tbsp unsweetened cocoa powder
- 1/2 cup creamy peanut butter
- 1 tsp vanilla extract
- pinch of salt
Instructions
- Prepare Dry Ingredients: In a large bowl, combine oats and coconut; set aside.
- Make Chocolate Mixture: In a medium saucepan, melt butter over medium heat. Stir in sugar, milk, cocoa powder, and salt. Bring to a rolling boil, stirring constantly, and boil for 1 minute.
- Finish the Cookie Mix: Remove from heat and stir in peanut butter and vanilla until smooth. Pour the hot mixture over the oats and coconut and mix until evenly coated.
- Shape and Set: Drop spoonfuls of the mixture onto wax paper or parchment paper. Let cool at room temperature until set, about 30–45 minutes.
- Enjoy: Store in an airtight container.
Notes
- For a chewier texture, use old-fashioned rolled oats instead of quick oats.
- You can also add 1/2 cup chopped nuts for extra crunch.
