Wet Ingredients:

  • 1/2 cup butter
  • 2 cups granulated sugar
  • 1/2 cup milk
  • 6 tbsp unsweetened cocoa powder
  • 1/2 cup creamy peanut butter
  • 1 tsp vanilla extract
  • pinch of salt

Instructions

  1. Prepare Dry Ingredients: In a large bowl, combine oats and coconut; set aside.
  2. Make Chocolate Mixture: In a medium saucepan, melt butter over medium heat. Stir in sugar, milk, cocoa powder, and salt. Bring to a rolling boil, stirring constantly, and boil for 1 minute.
  3. Finish the Cookie Mix: Remove from heat and stir in peanut butter and vanilla until smooth. Pour the hot mixture over the oats and coconut and mix until evenly coated.
  4. Shape and Set: Drop spoonfuls of the mixture onto wax paper or parchment paper. Let cool at room temperature until set, about 30–45 minutes.
  5. Enjoy: Store in an airtight container.
