Chuck Roast:

  • 34 lb chuck roast

Onion Mixture:

  • 2 tablespoons olive oil
  • 2 large yellow onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup dry red wine (optional)
  • 2 cups beef broth
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter

Garnish:

  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 325°F (160°C).
  2. Sear the Roast: Season the chuck roast with salt and pepper. Sear all sides in a Dutch oven until browned.
  3. Caramelize Onions: Cook sliced onions until caramelized. Add garlic, tomato paste, Worcestershire sauce, thyme, and rosemary.
  4. Deglaze and Braise: Deglaze with red wine, then add beef broth. Return the roast to the pot and braise in the oven for 3-3 1/2 hours.
  5. Thicken Sauce: Whisk butter and flour, stir into the pot until thickened.
  6. Serve: Slice or shred the roast, serve with onion gravy. Garnish with parsley.
