  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For Colcannon:

  • 2 pounds potatoes (peeled and cubed)
  • 4 tablespoons unsalted butter
  • ½ cup whole milk
  • 2 cups green cabbage (thinly shredded)
  • 4 green onions (sliced)
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Prepare Colcannon: Bring a large pot of salted water to a boil. Cook potatoes until tender, then mash with butter and milk. Stir in cabbage, green onions, salt, and pepper. Keep warm.
  2. Cook Steaks: Heat olive oil in a skillet, sear seasoned steaks, then set aside. Cook shallot in butter, add whiskey, cream, and mustard. Simmer until thickened. Return steaks to the pan and spoon sauce over them.
  3. Serve: Plate steaks with sauce and colcannon. Garnish with fresh parsley.
