Ingredients
Scale
Beef and Seasoning
- 1.5 lbs sirloin steak, cut into 1-inch cubes
- Salt, to taste
- Black pepper, to taste
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
Potatoes
- 1.5 lbs baby potatoes, halved
- Salt, for boiling water
Garlic Butter Sauce
- 4 tablespoons unsalted butter, divided
- 1 tablespoon olive oil
- 5 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
Instructions
- Parboil Potatoes: Bring a large pot of salted water to a boil. Add halved baby potatoes and parboil for 8 to 10 minutes until they are fork-tender but not falling apart. Drain the potatoes and set them aside.
- Prepare Skillet for Steak: Heat a large skillet over medium-high heat. Add 2 tablespoons of unsalted butter along with 1 tablespoon of olive oil and let the butter melt completely.
- Season and Sear Beef Bites: Add the sirloin steak cubes in a single layer to the skillet. Season the beef with salt, black pepper, smoked paprika, and onion powder. Avoid overcrowding by cooking in batches if necessary.
- Cook Beef: Sear the steak bites for 2 to 3 minutes on each side, or until they are browned and cooked to your desired level of doneness. Remove the cooked beef from the skillet and set aside.
- Sauté Garlic: In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for about 30 seconds or until fragrant, being careful not to burn it.
- Cook Potatoes: Add the parboiled potatoes to the skillet with the garlic butter. Cook for 6 to 8 minutes, stirring occasionally, until the potatoes are golden brown and crispy on the outside.
- Combine Beef and Potatoes: Return the seared beef bites to the skillet with the garlic butter potatoes. Toss everything together with the chopped fresh parsley to combine flavors.
- Serve: Serve the garlic butter beef bites and potatoes warm, optionally garnished with additional fresh parsley for a burst of color and freshness.
Notes
- Parboiling the potatoes ensures they cook evenly and become soft inside before crisping up in the skillet.
- For extra flavor, consider adding a splash of Worcestershire sauce or a pinch of red pepper flakes when cooking the beef.
- Use fresh parsley for best flavor, but dried parsley can be substituted in a pinch.
- Cook steak to your preferred doneness—adjust searing times accordingly.
- If you don’t have baby potatoes, small red or Yukon gold potatoes cut into similarly sized pieces will work.
