Instructions

  1. Parboil Potatoes: Bring a large pot of salted water to a boil. Add halved baby potatoes and parboil for 8 to 10 minutes until they are fork-tender but not falling apart. Drain the potatoes and set them aside.
  2. Prepare Skillet for Steak: Heat a large skillet over medium-high heat. Add 2 tablespoons of unsalted butter along with 1 tablespoon of olive oil and let the butter melt completely.
  3. Season and Sear Beef Bites: Add the sirloin steak cubes in a single layer to the skillet. Season the beef with salt, black pepper, smoked paprika, and onion powder. Avoid overcrowding by cooking in batches if necessary.
