Ingredients
Scale
Steak and Potatoes
- 1 ½ lbs top sirloin steak, cut into bite-sized pieces
- 1 lb baby potatoes, halved or quartered
- 1 small onion, thinly sliced
- 2 tbsp olive oil
- 3 tbsp fresh parsley, chopped
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp salt
- ½ tsp black pepper
Butter
- 4 tbsp butter, cubed
Instructions
- Par-boil the potatoes: Bring a pot of salted water to a boil. Add the baby potatoes and cook for 5 minutes. Drain and let cool for 10 minutes to partially cook them before grilling or baking.
- Prepare the steak: Cut the steak into bite-sized pieces. Optionally, marinate the steak with olive oil, garlic, salt, pepper, and Italian seasoning to infuse extra flavor.
- Combine ingredients: In a large bowl, toss the par-boiled potatoes, steak pieces, thinly sliced onion, olive oil, chopped parsley, minced garlic, Italian seasoning, salt, and pepper until everything is evenly coated.
- Assemble foil packets: Lay out 4 pieces of aluminum foil, each about 12×12 inches. Evenly divide the steak and potato mixture among the foil sheets, placing each portion in the center. Top each portion with cubed butter.
- Seal the packets: Fold the long edges over the mixture, then fold the shorter edges tightly to form a secure, sealed packet to trap the juices during cooking.
- Cook the packets: Choose your cooking method: Grill or campfire cook over medium-high heat for 8–10 minutes per side, or bake in a preheated oven at 425°F (220°C) for 20 minutes. For a crispier finish, open the foil packets and broil for 1–2 minutes.
- Serve: Carefully open the hot foil packets, being cautious of steam. Serve warm, garnished with additional fresh parsley if desired.
Notes
- Par-boiling the potatoes is optional but helps ensure they cook fully and evenly in the foil packets.
- Marinating the steak enhances flavor but is not required.
- Foil packets can be cooked on a grill, over a campfire, or in an oven depending on your preference and available equipment.
- Be careful when opening foil packets as steam can be very hot.
- For a lower fat version, reduce or omit the butter, though it adds rich flavor.
- Use heavy-duty aluminum foil to prevent tearing during cooking.
