Description

Garlic Butter Steak Bites with Parmesan Cream Sauce is a succulent and easy-to-make dish featuring juicy cubed sirloin or ribeye steak seared in garlic butter and topped with a rich, creamy Parmesan sauce. Perfect for a quick weeknight dinner, this flavorful recipe pairs well with mashed potatoes, pasta, or rice and offers a comforting American classic with a gourmet twist.

Ingredients

Scale

Steak Bites

  • pounds sirloin or ribeye steak, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning

Parmesan Cream Sauce

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Prepare and season steak: Pat the steak cubes dry with paper towels to ensure proper searing. Season evenly with salt, black pepper, and Italian seasoning for robust flavor.
  2. Sear the steak bites: Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the steak in a single layer and sear for 2–3 minutes on each side until browned, working in batches if necessary to avoid overcrowding. Remove the steak bites and set aside.
  3. Create garlic butter sauce: Reduce heat to medium. Add the remaining 2 tablespoons of butter and minced garlic to the pan, cooking for 30 seconds until fragrant. Return the steak bites to the pan, tossing them in the garlic butter to coat thoroughly, then remove from heat and set aside.
  4. Make Parmesan cream sauce: In a separate saucepan, melt 2 tablespoons of butter over medium heat. Whisk in the flour and cook for 1 minute to eliminate flour taste. Gradually whisk in heavy cream until smooth, then bring the mixture to a simmer. Cook for 2–3 minutes until thickened.
  5. Finish sauce: Stir in grated Parmesan cheese, garlic powder, salt, and pepper. Continue simmering until the cheese fully melts and the sauce is smooth and creamy.
  6. Serve: Plate the steak bites over mashed potatoes, pasta, rice, or your preferred base, and generously drizzle with the warm Parmesan cream sauce. Enjoy immediately for best flavor.

Notes

  • For a low-carb alternative, serve the steak bites over cauliflower mash or steamed vegetables instead of potatoes or pasta.
  • The Parmesan cream sauce can be prepared in advance and gently reheated before serving to save time on busy nights.
  • Use fresh garlic and freshly grated Parmesan for the best flavor and texture in the sauce.
  • Make sure not to overcrowd the pan when searing steak to achieve a perfect crust.
