  • 3 cups cauliflower florets
  • 8 oz mushrooms (sliced)
  • 3 cloves garlic (minced)
  • 1/4 cup vegetable broth or water
  • 1/4 tsp crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 tbsp fresh parsley (chopped)
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add cauliflower florets and cook for 5–6 minutes, stirring occasionally, until lightly browned.
  2. Add mushrooms and continue cooking for 4–5 minutes until softened.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Pour in vegetable broth, season with salt, pepper, and red pepper flakes if using, and cover skillet. Cook for 3–4 minutes, or until cauliflower is tender but not mushy.
  5. Remove lid, stir in fresh parsley, and cook uncovered for 1 minute to let excess moisture evaporate.
  6. Serve warm, topped with Parmesan cheese if desired.
