- 1 tablespoon lemon juice
For the Carrots:
- 1 pound carrots, peeled and sliced diagonally
- 1 tablespoon butter
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 400°F.
- Marinate the chicken: Mix olive oil, garlic, thyme, rosemary, salt, pepper, and lemon juice. Rub the mixture over the chicken and marinate for 10–15 minutes.
- Prepare the carrots: Spread the sliced carrots in a skillet, toss with butter, salt, and pepper.
- Cook: Place marinated chicken on top of carrots. Roast for 25–30 minutes until chicken reaches 165°F and carrots are tender.
- Rest and serve: Let the dish rest for 5 minutes, then garnish with parsley before serving.
