Chicken:

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Vegetables:

  • 2 medium sweet potatoes, peeled and diced
  • 1 bunch asparagus, trimmed and cut into thirds
  • 1 tablespoon olive oil for vegetables

Garnish:

  • Fresh lemon wedges
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Season chicken: Mix olive oil, garlic, thyme, rosemary, paprika, salt, and pepper. Rub the mixture over both sides of the chicken breasts.
  3. Roast sweet potatoes: Place sweet potatoes on a baking sheet, drizzle with olive oil, season, and roast for 15 minutes.
  4. Add chicken and asparagus: Push sweet potatoes to one side, add chicken and asparagus to the sheet. Roast for 18–22 minutes until chicken is cooked through.
  5. Rest and serve: Let the chicken rest, then slice and serve with roasted vegetables. Garnish with parsley and lemon if desired.
