Instructions

  1. Cook the noodles: Prepare the noodles according to the package instructions until al dente. Drain them well and set aside while you prepare the rest of the dish.
  2. Make the teriyaki sauce: In a small saucepan, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, and grated ginger. Bring the mixture to a gentle simmer over medium heat. Stir in the cornstarch slurry and cook for 1–2 minutes until the sauce thickens. Remove from heat and set aside.
  3. Cook the chicken: Slice the chicken into strips or bite-sized pieces. Heat a skillet over medium-high heat and cook the chicken for 5–7 minutes until it is nicely browned and cooked through. Pour the prepared teriyaki sauce over the chicken, toss well to coat, then remove from heat and keep warm.
