Indulge in a delightful Garlic Parmesan Chicken Scampi, a savory Italian-American dish that combines tender chicken, al dente pasta, and a flavorful garlic parmesan sauce. This creamy pasta recipe is quick and easy to make, perfect for a satisfying weeknight dinner.

Ingredients

Scale

For the Chicken:

  • 1 lb boneless skinless chicken breasts (thinly sliced)

For the Pasta:

  • 8 oz angel hair pasta

For the Sauce:

  • 3 tablespoons olive oil (divided)
  • 4 tablespoons unsalted butter (divided)
  • 6 garlic cloves (minced)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine or chicken broth
  • juice of 1 lemon
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • salt and black pepper to taste

Instructions

  1. Cook the Pasta: Prepare the angel hair pasta according to package instructions. Drain and set aside.
  2. Cook the Chicken: In a large skillet, heat 2 tablespoons olive oil and 1 tablespoon butter. Season chicken slices with salt and pepper, then cook for 3–4 minutes per side until golden. Remove and set aside.
  3. Prepare the Sauce: In the same skillet, add remaining olive oil and butter. Cook garlic and red pepper flakes until fragrant. Pour in wine or broth and lemon juice. Simmer until slightly reduced.
  4. Combine Ingredients: Return chicken to skillet, add cooked pasta. Toss together until coated. Sprinkle with Parmesan and parsley.
  5. Serve: Enjoy immediately with extra cheese if desired.

Notes

  • For extra richness, add a splash of heavy cream at the end.
  • You can substitute shrimp for chicken for a classic scampi variation.
