Ingredients
Scale
Main Ingredients
- 3 to 4 lbs chuck roast
- 6 cloves fresh garlic, minced
- 1 packet ranch dressing mix (1 oz)
- 1 packet au jus gravy mix (1 oz)
- 2 tbsp unsalted butter
- 1 cup baby carrots
- 1 large yellow onion, sliced
- Salt and freshly ground black pepper, to taste
Instructions
- Preheat Oven: Preheat your oven to 275°F (135°C) to prepare for slow roasting the pot roast.
- Season the Roast: Generously season both sides of the chuck roast with salt and freshly ground black pepper for balanced flavor.
- Sear the Meat: Heat 1 tablespoon of butter in a skillet over medium-high heat. Once melted, sear the chuck roast on all sides until it develops a rich brown crust, about 3 minutes per side. This step locks in juices and adds depth of flavor.
- Prepare for Braising: Transfer the seared roast to a Dutch oven or slow cooker. Arrange the sliced onions and baby carrots around it, then sprinkle the ranch dressing mix and au jus gravy mix evenly over the roast and vegetables.
- Add Garlic and Butter: Spread the minced fresh garlic over the top of the roast. Add the remaining 1 tablespoon of butter on top to enhance fat content and richness during cooking.
- Bake Until Tender: Cover the Dutch oven or slow cooker with a lid and bake in the preheated oven for approximately 4 hours, or until the meat is fork-tender and easily pulls apart.
Notes
- Be sure to sear the roast well; it greatly improves the final flavor and appearance.
- If you don’t have a Dutch oven, a slow cooker can be used instead, adjusting cooking times accordingly.
- For an even richer gravy, you can remove the roast after cooking and simmer the liquid on the stovetop to reduce and thicken.
- Serve with mashed potatoes or crusty bread to soak up the delicious juices.
- Leftovers keep well in the refrigerator for up to 3 days and freeze beautifully.
