Description

A simple and flavorful recipe for garlicky roasted cauliflower and mushrooms, combining tender roasted vegetables with aromatic herbs and a zesty finish. Perfect as a healthy side dish or a light vegetarian meal.

Ingredients

Scale

Vegetables

  • 1 medium head cauliflower, cut into florets
  • 8 oz cremini mushrooms, halved
  • 4 cloves garlic, minced

Seasonings

  • 3 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and freshly ground black pepper, to taste

Optional Garnish

  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to get it ready for roasting the vegetables.
  2. Toss Vegetables and Seasonings: In a large bowl, combine the cauliflower florets and halved mushrooms. Add the minced garlic, olive oil, dried thyme, dried rosemary, salt, and freshly ground black pepper. Toss everything thoroughly until the vegetables are evenly coated.
  3. Arrange on Baking Sheet: Spread the seasoned cauliflower and mushrooms in a single layer on a parchment-lined baking sheet. This ensures even roasting and easy cleanup.
  4. Roast Vegetables: Place the baking sheet in the oven and roast for 25 to 30 minutes. Stir the vegetables halfway through cooking to promote even browning. The cauliflower should become golden and tender, while the mushrooms will develop a nice browned appearance.
  5. Add Finishing Touches: Once roasted, optionally drizzle the vegetables with fresh lemon juice and sprinkle chopped fresh parsley over the top to add brightness and a fresh herbal note before serving.

Notes

  • Cut cauliflower into similar-sized florets to ensure even cooking.
  • Stir halfway through roasting to prevent uneven browning or burning.
  • Use fresh herbs instead of dried if preferred, adjusting quantities accordingly.
  • Serve warm as a side dish or toss with grains for a complete meal.
  • Leftovers store well in the refrigerator for up to 3 days and can be reheated in the oven or microwave.
