  • 2 eggs, beaten
  • 100 g cornstarch
  • 50 g all-purpose flour
  • 1/2 tsp salt
  • vegetable oil, for frying

For the Sauce:

  • 2 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 2 tbsp rice vinegar
  • 2 tbsp sugar
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch mixed with 2 tbsp water

Additional:

  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 46 dried red chilies (optional)
  • sliced spring onions and sesame seeds, for garnish

Instructions

  1. Prepare the Chicken: Whisk eggs in a bowl. In another bowl, combine cornstarch, flour, and salt. Dip chicken in egg, then coat in flour mixture.
  2. Fry the Chicken: Heat oil in a pan, fry chicken until golden and crispy. Drain on paper towels.
  3. Make the Sauce: Sauté garlic, ginger, and chilies. Whisk together soy sauce, hoisin sauce, vinegar, sugar, sesame oil, and cornstarch slurry. Simmer until thick.
  4. Combine: Toss fried chicken in the sauce until coated.
  5. Serve: Garnish with spring onions and sesame seeds.

  • You can use chicken breast instead of thighs.
