- 1 box (11.7 ounces) Golden Grahams cereal
- 1 bag (7 ounces) sweetened shredded coconut
- 2 bags (2 ounces each) sliced almonds
Syrup Ingredients
- 1 ½ cups salted butter
- 1 ½ cups granulated sugar
- 1 ⅔ cups light corn syrup
- 1 teaspoon vanilla extract
Instructions
- Prepare Baking Sheets: Line two large rimmed baking sheets with parchment paper and set them aside for easy cleanup and to prevent sticking.
- Combine Dry Ingredients: In a very large bowl, combine the Rice Chex cereal, Golden Grahams cereal, shredded coconut, and sliced almonds. Gently stir to mix evenly, then divide the mixture into two large bowls and set aside.
- Make the Syrup: In a medium saucepan, melt the salted butter over medium-high heat. Once melted, add granulated sugar and light corn syrup. Stir continuously until the mixture comes to a soft boil, ensuring sugar dissolves well.
- Boil and Remove from Heat: As soon as the mixture reaches a soft boil, set a timer for two minutes. Stir gently during this time to prevent burning. After two minutes, remove the saucepan from heat and quickly stir in the vanilla extract.
- Coat the Cereal Mix: Carefully pour half of the hot syrup over each bowl of the cereal mixture. Gently stir each bowl to evenly coat the cereal, coconut, and almonds with the gooey syrup.
- Cool and Serve: Pour each bowl of coated cereal mix out onto the prepared baking sheets. Allow the mixture to cool for a few minutes to let the syrup set slightly. Dig in and enjoy your crunchy, gooey snack!
