Description

A deliciously rich grilled cheese sandwich featuring creamy Gouda cheese paired with savory roasted mushrooms and sweet roasted onions, perfectly golden and buttery on the outside.

  • 1 medium onion, sliced (the sweeter, the better)

  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 4 tablespoons butter
  • 4 slices bread of choice
  • 1 cup Gouda cheese, shredded


Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) to prepare for roasting the vegetables.
  2. Prepare the vegetables: On a baking sheet, toss the sliced mushrooms and onions with olive oil, then season with salt and pepper to taste. Spread them evenly and roast in the oven for about 20 minutes, or until they’re browned and caramelized to your liking.
  3. Melt the butter: Heat a skillet over medium heat and melt 4 tablespoons of butter to prepare for grilling the sandwiches.
  4. Assemble the sandwiches: Take one slice of bread and layer it first with shredded Gouda cheese, then roasted mushrooms and onions, followed by another layer of Gouda cheese. Top with the second slice of bread and press lightly to hold it together.
  5. Grill the sandwiches: Briefly dip each sandwich in the melted butter to coat both sides. Place them in the skillet and cook for about 2 minutes on one side until lightly browned, then flip and cook for another 2-3 minutes until the bread is golden brown and the cheese is fully melted.
