Ground Beef:

  • 1 pound ground beef

Other:

  • 1 tablespoon olive oil
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 cups fresh spinach leaves
  • 1/2 cup crumbled feta cheese
  • juice of 1/2 lemon
  • fresh parsley for garnish (optional)

Instructions

  1. Heat Olive Oil: Heat olive oil in a large skillet over medium heat.
  2. Cook Beef: Add the ground beef and cook until browned, breaking it apart with a spoon, about 6-7 minutes. Drain excess fat if necessary.
  3. Sauté Onion and Garlic: Add the onion and garlic, and sauté until softened, about 2-3 minutes.
  4. Season: Stir in the oregano, paprika, salt, and pepper.
  5. Add Spinach: Add the spinach in batches, stirring until wilted.
  6. Finish: Remove from heat and stir in the crumbled feta and lemon juice. Garnish with fresh parsley if desired.
  7. Serve: Serve warm as is, over rice, or with warm pita bread.
