- 1 small onion (diced)
- 3 cloves garlic (minced)
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 6 cups fresh spinach leaves
- 1/2 cup crumbled feta cheese
- juice of 1/2 lemon
- fresh parsley for garnish (optional)
Instructions
- Heat Olive Oil: Heat olive oil in a large skillet over medium heat.
- Cook Beef: Add the ground beef and cook until browned, breaking it apart with a spoon, about 6-7 minutes. Drain excess fat if necessary.
- Sauté Onion and Garlic: Add the onion and garlic, and sauté until softened, about 2-3 minutes.
- Season: Stir in the oregano, paprika, salt, and pepper.
- Add Spinach: Add the spinach in batches, stirring until wilted.
- Finish: Remove from heat and stir in the crumbled feta and lemon juice. Garnish with fresh parsley if desired.
- Serve: Serve warm as is, over rice, or with warm pita bread.
