Ground Turkey Mixture:

  • 1 tablespoon olive oil
  • 1 pound ground turkey

Additional Ingredients:

  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn kernels, drained
  • 1 can (10 ounces) red enchilada sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 2 cups cooked rice
  • 1 1/2 cups shredded Mexican blend cheese
  • 1/4 cup fresh cilantro, chopped
  • Sour cream and avocado for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned.
  2. Stir in onion, garlic, and bell pepper, and cook until softened.
  3. Add black beans, corn, enchilada sauce, spices, and let simmer.
  4. Mix in cooked rice and top with cheese.
  5. Cover and cook until cheese is melted. Garnish with cilantro and serve with sour cream and avocado.

Notes
