Instructions

  1. Heat Olive Oil: Warm 2 tablespoons of olive oil in a large pot over medium heat to prepare for sautéing the vegetables.
  2. Sauté Onion: Add the diced onion to the pot and cook for 4-5 minutes, stirring occasionally, until the onion becomes translucent and soft.
  3. Add Garlic: Stir in the minced garlic and cook for an additional 1 minute, allowing the garlic to release its fragrance without burning.
  4. Cook Vegetables: Add the chopped cabbage, sliced carrots, celery, and diced potato to the pot. Cook for 5-7 minutes while stirring occasionally to start softening the vegetables.
  5. Add Broth and Seasonings: Pour in 6 cups of vegetable broth and stir in dried thyme, smoked paprika, bay leaf, salt, and pepper. Mix everything thoroughly to combine all the flavors.
  6. Simmer Soup: Bring the soup to a boil, then reduce the heat to low and let it simmer gently for 25-30 minutes, or until the vegetables are tender.
  7. Finish and Serve: Remove the bay leaf and taste the soup to adjust seasoning if needed. Serve the soup hot, garnished with chopped fresh parsley if desired.
