Description

These Healthy Banana Oatmeal Muffins are a wholesome and delicious treat perfect for breakfast or a snack. Made with ripe bananas, oats, and a hint of warm spices, they feature a crunchy brown sugar oat topping for added texture and flavor. Easy to prepare and baked to golden perfection, these muffins are a nutritious alternative to traditional muffins, offering fiber and natural sweetness without overpowering sugar.

Ingredients

Scale

Muffin Batter

  • 1 ½ cups oats (old fashioned or rolled oats)
  • 1 ¼ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • Pinch of ground nutmeg
  • 1 whole egg
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 ½ cups ripe bananas, mashed (about 3-4 bananas)

Topping

  • ½ cup oats (old fashioned or rolled oats)
  • ¼ teaspoon ground cinnamon
  • 2 tablespoons brown sugar
  • 2 tablespoons melted butter

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it is ready for baking the muffins.
  2. Mix Dry Ingredients: In a large bowl, combine the oats, flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Stir to evenly distribute all ingredients.
  3. Prepare Wet Ingredients: In a separate smaller bowl, whisk together the egg, oil, and vanilla extract until the mixture is smooth and well blended.
  4. Combine Wet and Dry Mixtures: Pour the wet ingredients into the bowl containing the dry mix. Stir gently until just combined—do not overmix, as the batter will still be quite dry at this point.
  5. Add Mashed Bananas: Fold the mashed bananas into the batter thoroughly, ensuring all the dry ingredients are evenly incorporated to form a moist mixture.
  6. Fill Muffin Tin: Lightly spray a muffin tin with nonstick spray or line it with paper liners. Divide the batter evenly among 12 muffin cups.
  7. Prepare Topping: In another small bowl, mix the oats, cinnamon, brown sugar, and melted butter until combined. Sprinkle this topping evenly over each muffin.
  8. Bake: Place the muffin tin in the preheated oven and bake for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Notes

  • For best results, use ripe bananas with brown speckles for natural sweetness.
  • Do not overmix the batter to keep muffins tender and moist.
  • These muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 2 months.
  • To make the recipe vegan, substitute the egg with a flax egg and use a plant-based oil.
  • Ensure muffin tin is properly greased or lined to avoid sticking.
