Tortillas:
- 8 whole wheat tortillas
Filling:
- 1 cup cooked turkey sausage crumbles
- 6 large eggs
- 4 large egg whites
- 1 cup diced bell peppers
- 1/2 cup diced onion
- 1 cup fresh spinach
- 1 cup shredded reduced-fat cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- Nonstick cooking spray
Instructions
- Prepare Vegetables: Heat a large skillet over medium heat and spray with cooking spray. Add diced onion and bell peppers and cook until softened.
- Cook Sausage and Veggies: Stir in turkey sausage and cook for 2 minutes. Add spinach and cook until wilted.
- Scramble Eggs: In a bowl, whisk eggs, egg whites, salt, pepper, and garlic powder. Pour into skillet and scramble until set.
- Assemble Burritos: Lay tortillas flat, divide egg mixture, sprinkle with cheese, roll into burritos.
