Instructions
- Preheat the oven: Preheat your oven to 350°F (176°C) and line a baking sheet with parchment paper to prevent the cookies from sticking.
- Mix ingredients: In a medium mixing bowl, combine the gluten-free rolled oats, mashed banana, unsweetened applesauce, peanut butter, egg, vanilla extract, and ground cinnamon. Stir the mixture thoroughly until all ingredients are well blended into a uniform dough.
- Form cookies: Using a cookie scoop or spoon, portion out balls of dough about 1½ to 2 tablespoons in size. Flatten each ball gently with your hand or the back of the scoop to approximately ½ inch thick, then arrange them spaced apart on the prepared baking sheet.
- Bake the cookies: Place the baking sheet in the preheated oven and bake for about 10 minutes, or until the cookies are slightly golden on the edges and set in the center.
- Cool and serve: Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring to a wire rack. Serve once cooled to toddler-friendly temperature.
